Recipe for flying fish

Cooking flying fish Barbados ‘local’ style:

  • mix together a grated onion, a chopped green pepper, a blade or two of chopped chives, seasoning (thyme, parsley, salt, pepper) and a few drops of lime juice
  • spread this mix over the meaty side of the fish
  • Let rest for one hour
  • Dip fish into beaten egg, then breadcrumbs, and fry gently in a little oil for around 10 minutes
  • Serve with wedges of lime
